David and I had a staycation at the Fairmont Grand Del Mar last week! It’s the first “fun” thing we’ve done in the last year since Covid has been around. Thankfully, the Fairmont Grand Del Mar has made their property socially-distant enough that we felt safe enough to staycation for a change of scenery.
In true vacation fashion, I left my “real camera” at home, so all of these photos were taken on my iPhone except the one below.

When we checked into our room, we found a little chocolate cake waiting for us. It was delicious!


The view from our balcony was of the adult relaxation pool. It was so beautiful!


Before dinner, we explored the property and for the first time (since we finally had access to a room key) wandered over to the gorgeous tennis courts.


If you ever take a stroll down the hallway adjacent to the Gift Shop, you’ll find a miniature model of the Fairmont Grand Del Mar Villas. It’s so cute!



Birthday Dinner at The Addison
We celebrated my 30th birthday at The Addison for a five course chef’s vegetarian tasting menu. David had the meat version and we both enjoyed a recreation of our wedding signature cocktail. The Addison usually serves their meals inside, but has adapted to Covid by hosting dining on their terrace which was lovely.







We were brought this fun tower of chips and dip for the “intermission.”




We enjoyed eating outdoors and celebrating the first night of my 30s to the tune of the frogs in the nearby pond. It was a highlight of our staycation at the Fairmont Grand Del Mar. Our desserts were fabulous! By the end of the meal, we were stuffed! We walked back to the main hotel and ended the night by warming up by the fireplace.
Hiking at the Fairmont
After breakfast the next morning, we went on a hiking trail around the resort. It was quite hilly, so from the tops of the hills you could see the Fairmont really well!


We hiked for about 45 minutes before riding bikes, enjoying the pool, a nap, then dinner. I didn’t take many photos this day because we were simply too busy enjoying it!

S’mores at the Fireside Lounge
The Fairmont has an entire Fireside Lounge offering on the Aria Lawn where you can order s’mores, cocktails, and more in the evening. After dinner, we took part in s’mores!





Breakfast at Amaya
The next morning, we ate breakfast at Amaya before checking out. I had the Eggs Benedict and swapped the ham for avocado. It was delicious! Thank you to the Fairmont for our amazing stay. It was wonderful to celebrate my birthday and our two year wedding anniversary at such a beautiful property.
